Ingredients

  • 4 slices Sourdough bread
  • 8 ounces Roasted turkey breast
  • 4 slices Pepper Jack cheese
  • 1 teaspoon Wasabi paste
  • 2 tablespoons Mayonnaise
  • 1 cup Fresh spinach
  • 1 medium Tomato
  • 2 tablespoons Butter
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

In a small bowl, mix the wasabi paste and mayonnaise until smooth. Set aside.

Step 2

Butter one side of each slice of sourdough bread. Lay the slices buttered-side down on a clean surface.

Step 3

Spread the wasabi mayo evenly on the unbuttered side of two slices of bread.

Step 4

Layer 4 ounces of turkey on top of the wasabi mayo, followed by 1/2 cup of fresh spinach and 2 slices of tomato per sandwich. Sprinkle with a pinch of salt and black pepper.

Step 5

Add 2 slices of Pepper Jack cheese on top of each stack, and cover with the remaining bread slices, buttered-side up.

Step 6

Preheat a skillet or griddle over medium heat. Place the sandwiches in the skillet and cook for about 2-3 minutes per side, or until the bread is golden brown and the cheese is melted.

Step 7

Remove the sandwiches from the skillet, slice them in half, and serve immediately.
