  • 15 ounces pinto beans, drained and rinsed
  • 2.5 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 0.5 teaspoons cayenne pepper (optional)
  • 1.5 teaspoons salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons fresh cilantro, chopped
  • 0 (to taste) shredded cheddar cheese (for garnish)
  • 0 (to taste) sour cream (for garnish)

Directions

Step 1

Heat a large pot or Dutch oven over medium heat and add the olive oil.

Once the oil is hot, sauté the diced onion, red bell pepper, and green bell pepper for about 5 minutes, or until they begin to soften.
