Ingredients

  • 12 pieces Large sea scallops
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 0.5 cup Heavy cream
  • 2 teaspoons Wasabi paste
  • 1 teaspoon Soy sauce
  • 1 teaspoon Lime juice
  • 2 tablespoons Chives (finely chopped)

Directions

Step 1

Pat the scallops dry with paper towels to remove excess moisture. Season both sides with salt and black pepper.

Step 2

Heat the olive oil in a large, non-stick skillet over medium-high heat.

Step 3

Once the oil is hot, add the scallops, ensuring they are not crowded in the pan. Sear them for 2-3 minutes per side until they are golden brown and slightly crisp on the outside. Remove the scallops from the skillet and set them aside.

Step 4

In the same skillet, reduce the heat to medium and add the butter. Stir until melted, then pour in the heavy cream.

Step 5

Whisk in the wasabi paste, soy sauce, and lime juice. Simmer for 2-3 minutes, stirring constantly, until the sauce thickens slightly. Adjust the seasoning with additional salt, pepper, or wasabi paste if desired.

Step 6

Return the scallops to the skillet and spoon the wasabi sauce over them. Let them heat for 1-2 minutes, ensuring they're warmed through without overcooking.

Step 7

Transfer the scallops to serving plates and drizzle the wasabi sauce over each portion. Garnish with the chopped chives for a pop of color and fresh flavor.

Step 8

Serve immediately with a side of steamed jasmine rice or sautéed vegetables if desired.
