  • 4 cups Vegetable oil (for frying)

Directions

Step 1

Peel and dice the potatoes into uniform chunks. Place them in a pot of salted water and bring to a boil. Cook until fork-tender, about 15-20 minutes.

Drain the potatoes and return them to the pot. Mash until smooth and let them cool slightly.
