Ingredients

  • 2 pounds Yukon Gold potatoes
  • 4 tablespoons Unsalted butter
  • 0.5 cups Whole milk
  • 2 teaspoons Fresh wasabi paste
  • 3 stalks Green onions (thinly sliced)
  • 1 teaspoons Salt
  • 0.5 teaspoons Ground black pepper

Directions

Step 1

Peel and cut the Yukon Gold potatoes into evenly sized chunks (about 1-2 inches).

Step 2

Place the potatoes in a large pot and cover them with cold water. Add a pinch of salt to the water.

Step 3

Bring the pot to a boil over medium-high heat. Reduce the heat to a simmer and cook for about 15-20 minutes, or until the potatoes are fork-tender.

Step 4

While the potatoes are cooking, warm the milk in a small saucepan over low heat until just heated through (do not boil). Set aside.

Step 5

Once the potatoes are done, drain them well and return them to the pot. Allow them to sit in the hot pot for 1-2 minutes to let any excess moisture evaporate.

Step 6

Add the butter to the potatoes and mash them using a potato masher or fork until smooth and creamy.

Step 7

Stir the warm milk into the mashed potatoes, a little at a time, until the desired consistency is reached.

Step 8

Mix in the wasabi paste, starting with 1 teaspoon, and gradually add more to taste, depending on your heat preference.

Step 9

Fold in the sliced green onions, reserving a small amount for garnish if desired.

Step 10

Season with salt and ground black pepper to taste. Stir well to combine.

Step 11

Transfer the mashed potatoes to a serving bowl and garnish with the reserved green onions. Serve immediately.
