Ingredients

  • 4 pieces pork chops
  • 2 tablespoons olive oil
  • 2 pieces garlic cloves, minced
  • 1 teaspoon fresh rosemary, chopped
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 large yellow onion, thinly sliced
  • 1 cup button mushrooms, sliced
  • 2 tablespoons unsalted butter
  • 1 tablespoon all-purpose flour
  • 1 cup beef or chicken stock
  • 0.25 cup heavy cream
  • 1 tablespoon fresh parsley, chopped (optional garnish)

Directions

Step 1

In a small bowl, mix minced garlic, rosemary, thyme, salt, and black pepper together to create a herb rub.

Step 2

Pat the pork chops dry with paper towels and rub them on both sides with the herb mixture.

Step 3

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. When hot, sear the pork chops for 3–4 minutes on each side until golden brown. Remove the pork chops from the skillet and set aside.

Step 4

In the same skillet, add the butter and let it melt. Add the sliced onion and mushrooms, and cook until they become soft and golden, about 5–7 minutes.

Sprinkle the flour over the onions and mushrooms, stirring constantly, and cook for 1 minute to remove the raw taste of the flour.
