Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 2 tablespoons soy sauce
  • 1 large egg
  • 1 cup cornstarch
  • 0.5 cup all-purpose flour
  • 1 teaspoon salt
  • 2 cups vegetable oil
  • 2 cups chicken broth
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 0.5 cup toasted almonds
  • 2 tablespoons green onions, finely chopped

Directions

Step 1

Pound the chicken breasts gently to an even thickness. Marinate the chicken with 2 tablespoons of soy sauce for 15 minutes.

Step 2

While the chicken marinates, prepare the batter. In a bowl, whisk together the egg, cornstarch, flour, salt, and 2 tablespoons of water to create a thick batter.

Step 3

Heat the vegetable oil in a large skillet or deep fryer to 350°F (175°C).

Step 4

Dip each chicken breast in the batter, coating it completely, and carefully place it into the hot oil. Fry until golden brown and cooked through, about 5-7 minutes per side. Remove and drain on paper towels.

Step 5

In a small saucepan, combine chicken broth, oyster sauce, and sugar. Bring the mixture to a simmer over medium heat.

Step 6

Dissolve 1 tablespoon of cornstarch in 2 tablespoons of water to make a slurry. Stir the slurry into the saucepan, whisking constantly, until the sauce thickens, about 2 minutes. Remove from heat.

Step 7

Slice the fried chicken into strips and arrange on a serving platter. Pour the prepared gravy over the chicken.

Step 8

Garnish with toasted almonds and chopped green onions. Serve immediately with steamed rice or vegetables if desired.
