Ingredients

  • 1.5 pounds Baby potatoes
  • 4 tablespoons Olive oil
  • 1 tablespoon Dijon mustard
  • 2 tablespoons Red wine vinegar
  • 1 teaspoon Honey
  • 2 pieces Garlic cloves, minced
  • 2 tablespoons Fresh parsley, chopped
  • 1 tablespoon Fresh dill, chopped
  • 1 tablespoon Fresh chives, chopped
  • 1 teaspoon Salt
  • 0.5 teaspoon Freshly ground black pepper
  • 6 cups Water

Directions

Step 1

Wash the baby potatoes thoroughly and cut any larger ones in half, ensuring all are approximately the same size for even cooking.

Step 2

In a large pot, bring 6 cups of water to a boil and add 1 teaspoon of salt.

Step 3

Gently add the potatoes to the boiling water and cook for 12-15 minutes, or until they are tender when pierced with a fork. Drain and set aside.
