Ingredients

  • 16 ounces Cheese tortellini
  • 1 cup Cherry tomatoes
  • 2 cups Baby spinach

  • 3 tablespoons Olive oil
  • 2 tablespoons Balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove Garlic
  • 0.25 cup Parmesan cheese
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Bring a large pot of water to a boil. Cook the tortellini according to the package instructions until al dente, then drain and set aside.

Step 2

While the tortellini is cooking, cut the cherry tomatoes in half, thinly slice the red onion, and mince the garlic.

Step 3

In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, minced garlic, salt, and pepper to make the dressing.
