Ingredients

  • 6 cups baby spinach
  • 6 slices bacon
  • 2 tablespoons pine nuts
  • 0.5 medium red onion
  • 2 cloves garlic
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • 0.25 teaspoons salt
  • 0.25 teaspoons black pepper

Directions

Step 1

Wash the baby spinach thoroughly and pat it dry. Set it aside in a large salad bowl.

Place the bacon slices in a large skillet over medium heat. Cook until crispy, flipping occasionally. Once cooked, transfer the bacon to a paper towel-lined plate to drain. Reserve 2 tablespoons of the bacon drippings in the skillet and discard the rest.

Crumble the bacon into small pieces and set aside.
