Ingredients

  • 6 cups baby spinach
  • 2 tablespoons olive oil
  • 1 large yellow onion
  • 8 ounces cremini mushrooms
  • 2 cloves garlic
  • 0.5 cup feta cheese
  • 0.5 cup walnuts or pecans
  • 1.5 tablespoons balsamic vinegar
  • 1 teaspoon honey
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Prepare the onions by peeling and thinly slicing them into half-moons.

Step 2

Rinse and dry the baby spinach leaves, and set aside.

Step 3

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onion and cook, stirring occasionally, for 10-12 minutes or until golden brown and caramelized.

Step 4

While the onions are cooking, clean and slice the cremini mushrooms. Mince the garlic cloves.

Step 5

Once the onions are caramelized, push them to one side of the skillet. Add the remaining 1 tablespoon of olive oil to the empty side of the skillet, then add the sliced mushrooms.

Cook the mushrooms over medium heat for 5-7 minutes or until they’re tender and browned. Stir the onions and mushrooms together, then add the minced garlic. Cook for an additional 1-2 minutes, stirring frequently, until the garlic is fragrant.

Step 7

Lower the heat and add the balsamic vinegar, honey, salt, and black pepper to the skillet. Stir everything together until well combined. Turn off the heat.

In a large serving bowl, place the baby spinach. Pour the warm onion and mushroom mixture directly on top of the spinach. The heat will slightly wilt the spinach leaves.

Crumble the feta cheese over the salad.

Toast the nuts (walnuts or pecans) in a dry skillet over medium heat for 2-3 minutes until fragrant. Sprinkle the toasted nuts over the salad.

Step 11

Toss everything gently to combine. Serve warm and enjoy!
