  • 6 cups Baby spinach
  • 8 ounces Italian sausage (mild or spicy)

  • 3 tablespoons Olive oil
  • 0.5 cup Feta cheese, crumbled
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 teaspoon Red pepper flakes (optional)

Directions

Step 1

Wash and dry the baby spinach thoroughly. Place the spinach in a large salad bowl and set aside.

Step 2

Slice the red onion thinly and mince the garlic cloves. Halve the cherry tomatoes.

Step 3

Remove the sausage casings (if necessary) and crumble the sausage into bite-sized pieces.

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the crumbled sausage and cook for 5–7 minutes, stirring occasionally, until browned and cooked through. Remove the sausage from the skillet and set it aside on a plate lined with paper towels to drain excess grease.
