Ingredients

  • 16 pieces Large shrimp, peeled and deveined
  • 2 large Potatoes
  • 4 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 2 cloves Garlic, minced
  • 1 cup Cherry tomatoes, halved
  • 1 cup White wine
  • 1 cup Heavy cream
  • 0.5 cup Parmesan cheese, grated
  • 4 cups Mixed salad greens
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Paprika
  • 2 teaspoons Lemon juice
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Grate the potatoes and squeeze out excess moisture using a clean kitchen towel.

Step 2

Season the grated potatoes with a pinch of salt and pepper.

In a skillet over medium-high heat, add 2 tablespoons of olive oil and press the grated potatoes into small pancake-like nests (about 4 inches in diameter). Cook for 4-5 minutes on each side until golden and crispy. Set aside on a plate lined with paper towels.
