Ingredients

  • 2 lbs baby red potatoes
  • 6 slices bacon
  • 1 small yellow onion
  • 3 tbsp apple cider vinegar
  • 2 tbsp Dijon mustard
  • 3 tbsp olive oil
  • 2 tbsp fresh parsley
  • 1 tsp salt
  • 0.5 tsp black pepper

Directions

Step 1

Wash and scrub the baby red potatoes, then cut them into bite-sized pieces.

Step 2

Place the potatoes in a large pot, cover with water, and add a pinch of salt. Bring to a boil over medium-high heat and cook until tender, about 10-12 minutes. Drain and set aside.

While the potatoes are cooking, cook the bacon in a large skillet over medium heat until crispy. Remove the bacon from the skillet and place on a paper towel-lined plate to cool. Once cool, crumble the bacon into small pieces.
