Ingredients

  • 12 oz pasta (penne, rigatoni, or fusilli)
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 1 medium yellow onion, finely diced
  • 4 oz sliced pepperoni
  • 1 tsp crushed red pepper flakes
  • 14 oz canned diced tomatoes (with their juices)
  • 2 tbsp tomato paste
  • 1 tsp Italian seasoning
  • 2 tbsp fresh basil leaves, chopped
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 cup grated Parmesan cheese

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain, set aside, and reserve 1/2 cup of the pasta cooking water.

Step 2

While the pasta cooks, heat the olive oil in a large skillet over medium heat.

Step 3

Add the minced garlic and diced onion to the skillet and sauté for 2-3 minutes, until fragrant and the onion is translucent.

Step 4

Stir in the sliced pepperoni and cook for an additional 2-3 minutes, allowing the edges of the pepperoni to crisp slightly.

Step 5

Add crushed red pepper flakes, canned diced tomatoes, tomato paste, and Italian seasoning to the skillet. Stir well to combine.

Step 6

Lower the heat to medium-low and let the sauce simmer for 5-7 minutes, stirring occasionally. Adjust the consistency with the reserved pasta water if the sauce is too thick.

Step 7

Season the sauce with salt and black pepper, then stir in the fresh basil leaves.

Step 8

Add the cooked pasta to the skillet and toss to coat the pasta evenly with the sauce.

Step 9

Remove the skillet from heat and sprinkle the grated Parmesan cheese over the pasta. Toss gently to combine.

Step 10

Serve warm, garnished with additional Parmesan cheese or basil if desired. Enjoy!
