Ingredients

  • 1 cup Green or brown lentils
  • 3 cups Water
  • 1 teaspoon Salt
  • 0.33 cup Sun-dried tomatoes (packed in oil)

  • 0.25 cup Fresh parsley
  • 0.25 cup Fresh basil
  • 3 tablespoons Extra virgin olive oil
  • 2 tablespoons Red wine vinegar
  • 1 clove Garlic
  • 1 teaspoon Dijon mustard
  • 0.25 teaspoon Black pepper
  • 0.25 cup Feta cheese (optional)

Directions

Step 1

Rinse the lentils under cold water to remove any debris.

Step 2

In a medium saucepan, combine the lentils, water, and 1/2 teaspoon of salt. Bring to a boil, then reduce the heat to a simmer. Cook for 20-25 minutes until the lentils are tender but not mushy. Drain any excess water and set the lentils aside.
