Ingredients

  • 400 grams Lamb backstrap or loin
  • 500 grams Butternut pumpkin
  • 3 tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • 4 cups Mixed salad greens
  • 200 grams Cherry tomatoes
  • 1 small Red onion
  • 4 tablespoons Basil pesto
  • 1 tablespoon Lemon juice
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 100 grams Feta cheese (optional)

Directions

Step 1

Preheat your oven to 200°C (390°F) and line a baking tray with parchment paper.

Step 2

Peel and deseed the butternut pumpkin, then cut it into bite-sized cubes (approximately 2 cm).

Place the pumpkin cubes on the prepared baking tray, drizzle with 1 tablespoon of olive oil, sprinkle with a pinch of salt, black pepper, and garlic powder. Toss to coat evenly.
