Ingredients

  • 500 grams lamb loin
  • 250 grams fusilli pasta
  • 3 tablespoons olive oil
  • 2 units garlic cloves
  • 200 grams cherry tomatoes
  • 100 grams baby spinach
  • 1 unit red onion
  • 1 bunch fresh parsley
  • 100 grams feta cheese
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the fusilli pasta according to the package instructions until al dente. Drain, rinse under cold water, and set aside.

Step 2

While the pasta cooks, heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Season the lamb loin with salt and pepper, and sear on each side for 3-4 minutes, depending on the thickness. Reduce the heat to medium and cook until it reaches your desired doneness. Remove from the pan, let rest for 5 minutes, then slice thinly.
