Ingredients

  • 450 grams green beans
  • 50 grams pine nuts
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 2 garlic cloves, minced
  • 10 grams fresh basil leaves, chopped
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 liters water
  • 10 ice cubes

Directions

Step 1

Fill a large pot with 1 liter of water and bring to a boil over high heat. Add a pinch of salt to the water.

Step 2

While waiting for the water to boil, trim the ends of the green beans and rinse them under cold water.

Step 3

Once the water is boiling, add the green beans and cook for 3–4 minutes, or until they are tender-crisp but still vibrant green.

Step 4

Prepare a large bowl of ice water. Once the green beans are cooked, immediately transfer them to the ice water to stop the cooking process and preserve their color. Let them sit for 2 minutes, then drain well and set aside.

Step 5

Heat a small skillet over medium heat and toast the pine nuts, stirring frequently, until golden brown and fragrant (about 2–3 minutes). Remove from the skillet immediately to prevent burning and set aside.

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for 30 seconds, or until fragrant but not browned.
