Ingredients

  • 8 oz Goat cheese log
  • 1 cup Panko breadcrumbs
  • 1 large Egg
  • 1 cup Sun-dried tomatoes (in oil)
  • 6 cups Mixed salad greens
  • 1 cup Walnuts
  • 0.25 cup Extra virgin olive oil
  • 3 tbsp Balsamic vinegar
  • 1 tsp Honey
  • 1 tsp Dijon mustard
  • 1 tsp Fresh thyme leaves
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 0.25 cup Vegetable oil (for frying)

Directions

Step 1

Slice the goat cheese log into 8 even rounds, approximately 1-inch thick.

Step 2

Place the panko breadcrumbs in a shallow bowl or plate.

Step 3

In a separate bowl, beat the egg until smooth.

Step 4

Dip each goat cheese round into the beaten egg, ensuring it is fully coated, then press it firmly into the panko breadcrumbs. Repeat to form a thick, even coating. Set them aside on a plate.

Step 5

Heat the vegetable oil in a skillet over medium heat. Once hot, gently fry the breaded goat cheese rounds for 1-2 minutes on each side, or until golden brown and crispy. Transfer to a plate lined with paper towels to soak up excess oil.

Step 6

Toast the walnuts in a dry skillet over medium heat for 2-3 minutes, stirring frequently, until fragrant. Set aside to cool.

Step 7

Drain and slice the sun-dried tomatoes into thin strips.

Step 8

In a small bowl, whisk together the olive oil, balsamic vinegar, honey, Dijon mustard, thyme, salt, and black pepper to make the salad dressing.

Step 9

In a large bowl, toss the mixed salad greens with the sliced sun-dried tomatoes and toasted walnuts. Drizzle the dressing over the salad and toss to combine.

Step 10

Divide the salad among four plates. Top each salad with two warm goat cheese rounds. Serve immediately and enjoy!
