Ingredients

  • 2 pounds Baby red potatoes
  • 1 pound Smoked sausage or bratwurst
  • 6 slices Thick-cut bacon
  • 1 medium Yellow onion
  • 0.333 cup Apple cider vinegar
  • 2 tablespoons Dijon mustard
  • 1 tablespoon Granulated sugar
  • 0.25 cup Chicken broth
  • 2 tablespoons Fresh parsley
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Wash the baby red potatoes and cut them into quarters. Place them in a pot, cover them with water, and add a pinch of salt.

Step 2

Bring the pot of water to a boil over medium-high heat. Cook the potatoes for 12-15 minutes, or until fork-tender. Drain the potatoes and set them aside.

Step 3

While the potatoes are cooking, slice the smoked sausage or bratwurst into 1/4-inch rounds. Set aside.

Step 4

In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon from the skillet and place it on a paper towel-lined plate to drain. Once cooled, crumble it into small pieces. Reserve 2 tablespoons of the bacon grease in the skillet.

Step 5

Finely dice the yellow onion. Add it to the skillet with the reserved bacon grease and sauté over medium heat until softened and translucent, about 3-4 minutes.

Step 6

Add the apple cider vinegar, Dijon mustard, granulated sugar, and chicken broth to the skillet. Stir well and bring the mixture to a simmer. Allow it to cook for 2-3 minutes to let the flavors meld.

Step 7

In the same skillet, add the sliced smoked sausage or bratwurst. Cook for 5-6 minutes, stirring occasionally, until the sausage is browned and heated through.

Step 8

Gently toss the cooked potatoes and crumbled bacon into the skillet with the sausage and dressing. Stir to coat everything evenly. Cook for an additional 3-4 minutes on low heat to warm through.

Step 9

Season the salad with salt and black pepper to taste. Sprinkle freshly chopped parsley on top before serving.

Step 10

Serve the Warm German Potato Salad with Sausage immediately while it’s still warm. Enjoy!
