  • 2 pounds Yukon Gold potatoes
  • 6 slices Bacon
  • 1 medium-sized, finely diced Yellow onion

  • 2 tablespoons Granulated sugar
  • 1 tablespoon Dijon mustard
  • 0.5 cup Chicken broth
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons, chopped Fresh parsley

Directions

Step 1

Bring a large pot of salted water to a boil.

Step 2

While the water heats, scrub the Yukon Gold potatoes. Leave the skins on for texture and flavor.

Cut the potatoes into bite-sized chunks, about 1-inch in size.

Step 4

Add the potato chunks to the boiling water and cook for 10-12 minutes, or until they are fork-tender but not falling apart. Drain well and set aside.
