  • 3 whole eggs
  • 3 whole egg yolks
  • 50 grams all-purpose flour
  • 1 teaspoon vanilla extract
  • 1 tablespoon unsweetened cocoa powder (for dusting)
  • 1 tablespoon butter or cooking spray (for greasing ramekins)

Directions

Step 1

Preheat your oven to 200°C (400°F). Grease six 6-ounce ramekins with butter or cooking spray and lightly dust them with unsweetened cocoa powder. Tap out any excess cocoa.

Step 2

In a medium heatproof bowl, melt the dark chocolate and unsalted butter together. Use a microwave in 30-second intervals, stirring after each, or set the bowl over a saucepan of simmering water (double boiler method). Stir until smooth and glossy. Let it cool slightly.

In a separate mixing bowl, whisk together the granulated sugar, whole eggs, and egg yolks until the mixture is pale and frothy, about 2-3 minutes.
