  • 200 grams, halved cherry tomatoes
  • 100 grams baby spinach leaves
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 2 tablespoons lemon juice
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons, chopped fresh parsley (optional, for garnish)

Directions

Step 1

Heat 2 tablespoons of olive oil in a large skillet over medium heat.

Step 2

Add the diced red onion and sauté for 3-4 minutes until softened.

Step 3

Stir in the minced garlic and ground cumin, cooking for 1 minute until fragrant.
