Ingredients

  • 500 grams Baby potatoes
  • 2 pieces Chicken breast
  • 150 grams Bacon
  • 3 tablespoons Olive oil
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Apple cider vinegar
  • 1 teaspoon Honey
  • 2 pieces Garlic cloves
  • 3 tablespoons Fresh parsley
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper

Directions

Step 1

Wash the baby potatoes and cut them into bite-sized pieces. Place them in a pot of salted boiling water and cook for 10–12 minutes, or until fork-tender. Drain and set aside.

Step 2

Heat 1 tablespoon of olive oil in a skillet over medium heat. Season the chicken breasts with a pinch of salt and pepper, and cook for 4–5 minutes on each side, or until fully cooked. Remove from the skillet, let rest for 5 minutes, then slice into thin strips.

Step 3
