Preheat your oven to 400°F (200°C).
Wash and halve the baby potatoes. Pat them dry with a kitchen towel.
In a large mixing bowl, toss the potatoes with 2 tablespoons of olive oil, 1 teaspoon of salt, and 0.5 teaspoons of black pepper.
Spread the potatoes in a single layer on a baking sheet lined with parchment paper. Roast in the oven for 25-30 minutes, flipping halfway, until golden brown and tender.
