Ingredients

  • 6 cups (cut into cubes) French or Italian bread
  • 3 tablespoons Olive oil
  • 3 units Garlic cloves, minced
  • 4 cups Cherry tomatoes, halved
  • 1 cup Fresh basil, chopped
  • 2 cups Shredded mozzarella cheese
  • 0.5 cups Grated Parmesan cheese
  • 2 tablespoons Balsamic glaze
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 0.25 teaspoons Crushed red pepper flakes (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.

Step 2

Spread the cubed bread evenly across the baking dish and drizzle with 2 tablespoons of olive oil. Toss to coat, then bake for 8 minutes, or until the bread is lightly toasted. Remove from oven and set aside.

Step 3

In a large skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes, or until fragrant.

Step 4

Stir in the halved cherry tomatoes, salt, black pepper, and crushed red pepper flakes (if using). Cook for 5 minutes, stirring occasionally, until the tomatoes are slightly softened.

Step 5

Remove the skillet from the heat and stir in the chopped basil.

Step 6

Spoon the tomato mixture evenly over the toasted bread cubes in the baking dish.

Step 7

Sprinkle the shredded mozzarella and grated Parmesan cheese evenly over the top.

Step 8

Bake for 15-18 minutes, or until the cheeses are melted and bubbling.

Step 9

Remove from the oven and let cool for 5 minutes. Drizzle the casserole with balsamic glaze just before serving.

Step 10

Serve warm as a main dish, side, or appetizer, and enjoy!
