  • 4 medium Beets
  • 2 cups Fresh pineapple
  • 2 tablespoons Olive oil
  • 1 tablespoon Honey
  • 1 teaspoon Fresh ginger
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Fresh parsley

Directions

Step 1

Preheat your oven to 400°F (200°C).

Wash and trim the beets, then wrap each in aluminum foil. Place the wrapped beets on a baking sheet and roast in the oven for 40-45 minutes or until they are fork-tender.

While the beets are roasting, peel and dice the fresh pineapple into bite-sized chunks.
