Ingredients

  • 3 medium beets
  • 2 medium potatoes
  • 1 large carrot
  • 1 medium onion
  • 2 cloves garlic
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • 2 tablespoons, chopped fresh dill
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0 sour cream (optional, for garnish)

Directions

Step 1

Peel and dice the beets, potatoes, and carrot into small cubes. Set aside.

Step 2

Finely chop the onion and mince the garlic cloves.

Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent.

Add the minced garlic and sauté for an additional 1 minute until fragrant.

Step 5

Stir in the diced beets, potatoes, and carrot. Sauté for 5 minutes, stirring occasionally.

Step 6

Pour in the vegetable broth and bring the mixture to a boil.

Step 7

Reduce the heat to low, cover the pot, and let the soup simmer for 20-25 minutes, or until the vegetables are fork-tender.

Step 8

Using an immersion blender (or transferring the soup in batches to a blender), blend the soup until smooth.

Step 9

Stir in the lemon juice, salt, and black pepper. Adjust seasoning to taste.

Step 10

Ladle the soup into bowls and garnish with fresh dill and a dollop of sour cream, if desired.

Step 11
