Ingredients

  • 4 slices Thick-cut bacon
  • 2 tablespoons Olive oil

  • 1 teaspoon Dijon mustard
  • 1 teaspoon Honey
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper, freshly ground
  • 1 tablespoon Flat-leaf parsley, finely chopped (optional)

Directions

Step 1

Place the bacon in a cold skillet and set it over medium heat. Cook until the bacon is crispy, flipping occasionally, about 7-8 minutes. Transfer the bacon to a plate lined with paper towels to drain. Once cooled, crumble the bacon into small pieces.

Step 2

Leave approximately 2 tablespoons of the bacon grease in the skillet. If there is excess, pour it off carefully and discard or save for another use.

Add the olive oil to the skillet with the bacon grease and heat over medium heat. Add the sliced mushrooms, stirring occasionally, and cook for 4-5 minutes until the mushrooms are softened and golden brown.
