Ingredients

  • 4 slices Bacon
  • 1 small, minced Shallot
  • 1 clove, minced Garlic
  • 3 tablespoons Apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 2 teaspoons Honey
  • 3 tablespoons Olive oil
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Place the bacon slices in a skillet over medium heat. Cook until crispy and browned, about 6–8 minutes. Remove the bacon from the skillet and let it drain on a plate lined with paper towels, reserving the bacon grease in the pan.

Step 2

Once the bacon has cooled, crumble it into small pieces and set aside.

Step 3

In the same skillet with the bacon grease, add the minced shallot and garlic. Cook over medium heat for 1–2 minutes, stirring frequently, until softened and fragrant.

Step 4

Lower the heat to medium-low, then whisk in the apple cider vinegar, Dijon mustard, and honey until well combined.

Step 5

Slowly drizzle in the olive oil while whisking continuously to emulsify the dressing.

Step 6

Season the dressing with salt and black pepper, tasting and adjusting as needed.

Step 7

Add the crumbled bacon back into the skillet and stir to combine.

Step 8

Serve the warm bacon dressing immediately over salad greens, roasted vegetables, or any dish of your choice.
