Ingredients

  • 2 large Avocados
  • 2 medium Roma tomatoes
  • 0.5 small Red onion
  • 2 whole Garlic cloves
  • 0.25 cup Fresh cilantro
  • 1 medium Jalapeño
  • 1 tablespoon Lime juice
  • 1 tablespoon Extra virgin olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground cumin

Directions

Step 1

Halve, pit, and dice the avocados, then scoop out the flesh and set it aside in a bowl.

Step 2

Dice the Roma tomatoes and finely chop the red onion, garlic cloves, cilantro, and jalapeño. Remove the seeds from the jalapeño if you'd like a milder spice level.

Step 3

Heat the extra virgin olive oil in a medium skillet over medium heat.

Step 4

Add the garlic and red onion to the skillet and sauté for 2 minutes until fragrant and slightly softened.

Step 5

Add the diced tomatoes and jalapeño to the skillet. Cook for 2 to 3 minutes, stirring occasionally, until the tomatoes start to soften but retain their shape.

Step 6

Lower the heat to medium-low and gently fold in the diced avocado. Cook for an additional minute, just until the avocado warms up but does not break down.

Step 7

Remove the skillet from heat and stir in the lime juice, salt, ground cumin, and chopped fresh cilantro.

Step 8

Transfer the warm avocado salsa to a serving bowl and serve immediately with your favorite chips, tacos, or grilled protein.
