Ingredients

  • 1 pound fresh asparagus
  • 3 tablespoons olive oil
  • 1 tablespoon white wine vinegar
  • 1 teaspoon Dijon mustard
  • 2 teaspoons fresh tarragon leaves, finely chopped
  • 1 small shallot, finely minced
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper, freshly ground
  • 1 teaspoon lemon zest
  • 2 tablespoons optional: grated Parmesan cheese

Directions

Step 1

Trim the woody ends off 1 pound of fresh asparagus. Rinse well and pat dry.

Step 2

Bring a large pot of salted water to a boil. Prepare a large bowl filled with ice water.

Step 3

Add the asparagus to the boiling water and cook for 2-3 minutes, or until bright green and slightly tender. Immediately transfer the asparagus to the ice water to stop the cooking process. Drain and set aside.

Step 4

In a small bowl, whisk together 3 tablespoons of olive oil, 1 tablespoon of white wine vinegar, 1 teaspoon of Dijon mustard, 2 teaspoons of finely chopped fresh tarragon leaves, 1 small minced shallot, 0.5 teaspoons of salt, 0.25 teaspoons of freshly ground black pepper, and 1 teaspoon of lemon zest to create the vinaigrette.

Step 5

Arrange the blanched asparagus on a serving platter. Drizzle the tarragon vinaigrette over the asparagus while it’s still slightly warm.

Step 6

Optional: Sprinkle 2 tablespoons of grated Parmesan cheese over the top for added flavor.

Step 7

Serve immediately as a warm side dish or appetizer. Enjoy!
