  • 4 medium carrots, chopped into 2-inch pieces
  • 3 large russet potatoes, chopped into chunks
  • 1.5 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 2 tablespoons fresh parsley, chopped (optional garnish)

Directions

Step 1

Pat the bottom round roast dry with paper towels to remove excess moisture. Season generously with salt, black pepper, garlic powder, onion powder, rosemary, and thyme on all sides.

Heat a large skillet over medium-high heat and add the olive oil. Sear the roast on all sides until a golden brown crust forms, about 2-3 minutes per side. Remove the roast from the skillet and set aside.
