Ingredients

  • 2 cups raw walnuts
  • 0.25 cup sun-dried tomatoes
  • 1 tablespoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon lime juice
  • 2 tablespoons water
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Place the raw walnuts in a bowl and cover them with water. Let them soak for 15 minutes to soften them slightly, then drain and pat dry with a clean towel.

Step 2

In a small bowl, soak the sun-dried tomatoes in warm water for about 5 minutes to rehydrate, then drain.

Step 3

Add the soaked walnuts, rehydrated sun-dried tomatoes, chili powder, smoked paprika, cumin, garlic powder, onion powder, soy sauce, lime juice, water, salt, and black pepper to a food processor.

Step 4

Pulse the mixture in the food processor until it reaches a crumbly, 'meaty' texture. Be sure not to overprocess as it can turn into a paste.

Step 5

Taste and adjust seasoning as needed. If you'd like more spice, add a pinch of cayenne pepper or additional chili powder.

Step 6

Transfer the walnut taco meat to a serving bowl and use as a filling for tacos, burritos, lettuce wraps, or a salad topping.
