Ingredients

  • 3 cups Whole wheat flour
  • 1 cup All-purpose flour
  • 2.25 teaspoons Instant yeast
  • 1.5 teaspoons Salt
  • 1.5 cups Warm water
  • 2 tablespoons Honey
  • 2 tablespoons Olive oil
  • 1 cup Walnuts, chopped
  • 0.75 cup Raisins
  • 2 tablespoons Milk (for brushing)

Directions

Step 1

In a large mixing bowl, combine whole wheat flour, all-purpose flour, and salt.

Step 2

In a separate small bowl, dissolve the instant yeast in warm water. Add the honey and olive oil, stirring to combine.

Step 3

Pour the wet mixture into the dry ingredients. Mix until a shaggy dough forms.

Step 4

Transfer the dough to a lightly floured surface and knead for about 8-10 minutes, or until the dough is smooth and elastic.

Step 5

Flatten the dough slightly and sprinkle the chopped walnuts and raisins over it. Knead gently to incorporate them evenly throughout the dough.

Step 6

Form the dough into a ball and place it in a lightly oiled bowl. Cover with a clean kitchen towel or plastic wrap and let it rise in a warm place for 1-1.5 hours, or until doubled in size.

Step 7

Punch down the dough and shape it into a loaf. Place the loaf in a greased 9x5 inch loaf pan.

Step 8

Cover the pan with the towel and let it rise again for 30-40 minutes, or until the dough rises just above the edge of the pan.

Step 9

Preheat your oven to 375°F (190°C).

Step 10

Brush the top of the loaf with milk using a pastry brush to promote browning.

Step 11

Bake the bread in the preheated oven for 35-40 minutes, or until the top is golden brown and the loaf sounds hollow when tapped.

Step 12

Remove the bread from the pan and transfer it to a wire rack to cool completely before slicing.
