Ingredients

  • 2 cups All-purpose flour
  • 1/4 cup Granulated sugar
  • 1 tablespoon Baking powder
  • 1/2 teaspoon Salt
  • 1/2 cup Unsalted butter (cold, cut into small cubes)
  • 1/2 cup Chopped walnuts
  • 1/2 cup Raisins
  • 2/3 cup Heavy cream
  • 1 teaspoon Vanilla extract
  • 1 Egg (for egg wash, optional)
  • 1 tablespoon Milk (for egg wash, optional)

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.

Step 3

Add the cold, cubed unsalted butter to the flour mixture. Use a pastry blender or your fingertips to work the butter into the flour until the mixture resembles coarse crumbs.

Step 4

Stir in the chopped walnuts and raisins, ensuring they are evenly distributed throughout the dry ingredients.

Step 5

In a small bowl, mix the heavy cream and vanilla extract. Pour this mixture into the dry ingredients and gently stir until the dough comes together. Be careful not to overmix.

Step 6

Transfer the dough to a lightly floured surface and gently pat it into a round disc, about 1 inch thick. Use a sharp knife or a bench scraper to cut the disc into 8 equal wedges.

Step 7

Place the scones onto the prepared baking sheet, spacing them about 2 inches apart.

Step 8

If desired, prepare an egg wash by whisking together the egg and milk. Brush the top of each scone with the egg wash for a golden, glossy finish.

Step 9

Bake in the preheated oven for 18 to 20 minutes, or until the scones are golden brown and a toothpick inserted in the center comes out clean.

Step 10

Remove the scones from the oven and allow them to cool slightly on the baking sheet before transferring to a wire rack to cool completely.

Step 11

Serve warm or at room temperature with butter, clotted cream, or your favorite jam.
