Ingredients

  • 1 pound asparagus
  • 0.5 cup walnuts
  • 1 whole orange
  • 2 tablespoons olive oil
  • 2 cloves garlic
  • 1 tablespoon honey
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Trim the woody ends off the asparagus and wash thoroughly. Pat dry with a clean kitchen towel.

Step 2

Heat a dry skillet over medium heat. Add the walnuts and toast them for 3-5 minutes, stirring occasionally, until they are aromatic and lightly browned. Remove the walnuts from the skillet and set aside.

Step 3

Zest the orange and set the zest aside. Then, cut the orange in half and juice it into a small bowl, discarding seeds.

Step 4

Mince the garlic cloves finely.

Step 5

In the same skillet, heat the olive oil over medium heat. Add the minced garlic and cook for 30 seconds until fragrant, being careful not to burn it.

Step 6

Add the asparagus to the skillet. Sauté for 5-7 minutes, turning occasionally, until the asparagus is tender-crisp and bright green.

Step 7

Reduce the heat to low. Stir in the orange juice, orange zest, honey, salt, and black pepper. Cook for an additional 2-3 minutes, allowing the glaze to slightly thicken and coat the asparagus.

Step 8

Remove the skillet from heat and sprinkle the toasted walnuts over the asparagus.

Step 9

Transfer to a serving dish and serve warm as a vibrant side dish.
