Ingredients

  • 400 grams linguine pasta
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 3 cloves garlic cloves, minced
  • 200 grams cooked ham, diced
  • 100 grams walnuts, finely chopped
  • 1 cup heavy cream
  • 50 grams grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • 0 to taste salt
  • 0 to taste black pepper
  • 1 liter water
  • 1 teaspoon salt (for pasta water)

Directions

Step 1

Bring a large pot of water to a boil, add 1 teaspoon of salt, and cook the linguine pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the linguine and set aside.

Step 2

In a large skillet, heat the butter and olive oil over medium heat. Once melted, add the minced garlic and sauté for about 1 minute until fragrant.

Step 3

Add the diced ham and chopped walnuts to the skillet. Cook for 3-4 minutes, stirring occasionally, until the ham is lightly browned, and the walnuts are toasted.

Reduce the heat to low and pour in the heavy cream. Stir well to combine, and let it simmer gently for 2-3 minutes.

Stir in the grated Parmesan cheese. If the sauce is too thick, add a bit of the reserved pasta water (a tablespoon at a time) to reach your desired consistency.
