Ingredients

  • 200 grams Sharp cheddar cheese, grated
  • 120 grams Unsalted butter, softened
  • 150 grams All-purpose flour
  • 75 grams Finely chopped walnuts
  • 0.25 teaspoons Cayenne pepper
  • 0.25 teaspoons Salt

Directions

Step 1

Preheat your oven to 180°C (350°F) and line two baking trays with parchment paper.

Step 2

In a large mixing bowl, combine the grated cheddar cheese and softened butter. Using a hand mixer or wooden spoon, mix until the texture is smooth and creamy.

Step 3

Add the all-purpose flour, cayenne pepper, and salt to the cheese mixture. Stir until all ingredients are well combined and a dough starts to form.

Step 4

Fold in the finely chopped walnuts, ensuring they are evenly distributed throughout the dough.

Step 5

Transfer the dough onto a lightly floured surface and form it into a log approximately 5 cm (2 inches) in diameter. Wrap the log in plastic wrap and refrigerate for 30 minutes to firm up the dough.

Step 6

Once chilled, remove the dough from the refrigerator and slice it into 6 mm (1/4 inch) thick rounds. Place the rounds onto the prepared baking trays, leaving a bit of space between each wafer.

Step 7

Bake the wafers in the preheated oven for 12-15 minutes, or until the edges are golden brown.

Step 8

Remove the trays from the oven and allow the wafers to cool for 5 minutes on the tray before transferring them to a wire rack to cool completely.

Step 9

Serve as a snack or pair with dips and spreads. Enjoy!
