Ingredients

  • 2 pounds Beef chuck roast
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 1 large Yellow onion
  • 4 medium Carrots
  • 3 Celery stalks
  • 4 medium Russet potatoes
  • 3 cloves Garlic
  • 4 cups Beef broth
  • 1 cup Red wine
  • 2 tablespoons Tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Thyme
  • 1 teaspoon Rosemary
  • 1 Bay leaf
  • 2 tablespoons All-purpose flour
  • 2 tablespoons Water
  • 2 tablespoons Parsley (optional, for garnish)

Directions

Step 1

Cut the beef chuck roast into 1.5-inch cubes and pat dry with paper towels. Season with salt and pepper.

Step 2

In a large skillet, heat olive oil over medium-high heat. Sear the beef cubes in batches until browned on all sides. Transfer the seared beef to the crock pot.

Step 3

Dice the onion, slice the carrots and celery, and cut the potatoes into 1-inch chunks. Mince the garlic.

Step 4

In the same skillet used for the beef, add the onion and garlic. Sauté for 2-3 minutes until fragrant, then add the tomato paste and cook for another minute. Transfer the mixture to the crock pot.

Step 5

Add the carrots, celery, and potatoes to the crock pot, layering them evenly.

Step 6

Pour in the beef broth and red wine. Stir in Worcestershire sauce, thyme, rosemary, and place the bay leaf on top.

Step 7

Cover the crock pot and cook on low for 8 hours, or until the beef and vegetables are tender.

Step 8

About 15 minutes before the stew finishes cooking, make a slurry by whisking together the flour and water. Stir the slurry into the crock pot to thicken the stew.

Step 9

Once thickened, taste and adjust seasoning as needed. Remove the bay leaf before serving.

Step 10

Serve the stew warm, garnished with fresh parsley if desired. Pair with crusty bread for a complete meal.
