  • 2 large russet potatoes (peeled and cubed)
  • 4 sprigs fresh thyme
  • 2 bay leaves
  • 2 tablespoons fresh parsley (chopped, for garnish)

Directions

Step 1

Cut the beef chuck into 1.5-inch cubes. Pat dry with paper towels and season with kosher salt and black pepper.

Step 2

Dust the beef pieces lightly with all-purpose flour, shaking off excess.

Step 3

Heat 2 tablespoons of olive oil in a large Dutch oven or heavy pot over medium-high heat. Sear the beef in batches, ensuring all sides are browned, about 3-4 minutes per batch. Remove the beef and set aside.
