  • 1 pound Boneless, skinless chicken breasts
  • 3 large Carrots
  • 3 large Celery stalks
  • 1 medium Yellow onion
  • 4 cloves Fresh garlic
  • 8 cups Chicken broth
  • 2 cups Egg noodles
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried parsley
  • 1 Bay leaf
  • 2 tablespoons Olive oil
  • 2 cups Water

Directions

Step 1

Dice the carrots, celery, onion, and garlic. Set aside.

Step 2

Dice the chicken breasts into 1-inch pieces.

Step 3

In a large stockpot, heat olive oil over medium heat.

Step 4

Add the diced chicken and cook until lightly browned, about 5-7 minutes. Remove the chicken and set it aside.

In the same pot, sauté the onions for 3-4 minutes until translucent.
