  • 4 pieces boneless, skinless chicken breasts
  • 1 15-ounce can pineapple tidbits (with juice)
  • 0.25 cups brown sugar
  • 0.25 cups apple cider vinegar
  • 2 tablespoons low-sodium soy sauce
  • 2 teaspoons cornstarch
  • 2 cloves garlic cloves, minced
  • 1 large red bell pepper, diced
  • 1 large green bell pepper, diced
  • 2 tablespoons olive oil
  • 2 cups white rice (for serving)
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper

Directions

Step 1

Season the chicken breasts with salt and black pepper on both sides.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 6-8 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.

In the same skillet, add the minced garlic and cook for 30 seconds until fragrant.
