Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 1 cup Barbecue sauce
  • 0.5 cup Pineapple juice
  • 2 tablespoons Soy sauce
  • 2 tablespoons Brown sugar
  • 2 cloves Garlic cloves, minced
  • 4 slices Fresh pineapple slices
  • 2 cups Cooked jasmine rice
  • 0.5 cup Coconut milk
  • 2 tablespoons Chopped green onions (optional, for garnish)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

In a small bowl, prepare the Waikiki glaze by mixing the barbecue sauce, pineapple juice, soy sauce, brown sugar, and minced garlic. Set aside.

Step 2

Preheat a grill or grill pan over medium-high heat.

Step 3

Season the chicken breasts with salt and black pepper on both sides.

Step 4

Grill the chicken for about 6-7 minutes per side, or until fully cooked and the internal temperature reaches 165°F (74°C). Brush the prepared glaze generously over the chicken during the last 2-3 minutes of grilling. Remove from the grill and let rest for 5 minutes.

Step 5

While the chicken is grilling, brush the pineapple slices with a little of the leftover glaze and grill them for 1-2 minutes per side until caramelized and slightly charred.

Step 6

In a small saucepan over medium heat, combine the cooked jasmine rice with coconut milk. Stir until heated through and creamy, about 3-5 minutes.

Step 7

To serve, place a scoop of coconut rice on each plate, top with a grilled chicken breast, and add a grilled pineapple slice on the side. Sprinkle chopped green onions for garnish (if desired).

Step 8

Enjoy your Waikiki BBQ Chicken Dish with its tropical flair!
