Lay the beef slices flat. Spread a thin layer of Dijon mustard on one side of each slice.
Place a slice of bacon on top of the mustard-coated side of each beef slice.
In a small bowl, mix the chopped onion, grated carrot, breadcrumbs, parsley, salt, and pepper. Add the beaten egg to bind the mixture.
