  • 2 teaspoons Dijon mustard
  • 2 tablespoons Butter
  • 500 milliliters Beef stock
  • 1 tablespoon Tomato paste
  • 2 tablespoons Flour (for dusting)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 8 pieces Kitchen string or toothpicks

Directions

Step 1

Lay the beef slices flat. Spread a thin layer of Dijon mustard on one side of each slice.

Step 2

Place a slice of bacon on top of the mustard-coated side of each beef slice.

Step 3

In a small bowl, mix the chopped onion, grated carrot, breadcrumbs, parsley, salt, and pepper. Add the beaten egg to bind the mixture.

Spoon a small amount of the filling mixture onto one end of each beef slice. Roll the beef tightly around the filling, tucking in the sides as you go. Secure with kitchen string or toothpicks to keep the rolls intact.
