Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 2 teaspoons paprika
  • 1 teaspoon ground cumin
  • 0.5 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 piece large onion
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 0.5 cup chicken broth

Directions

Step 1

In a small bowl, mix together the paprika, ground cumin, cayenne pepper, salt, and black pepper.

Step 2

Rub the spice mixture evenly over both sides of the chicken breasts.

Step 3

In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.

Step 4

Add the chicken breasts to the skillet and cook for 5-6 minutes per side, or until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.

Step 5

Thinly slice the onion and add it to the same skillet with the remaining 1 tablespoon of olive oil. Cook over medium heat, stirring occasionally, until the onion is softened and slightly caramelized, about 6-8 minutes.

Step 6

Stir in the balsamic vinegar, honey, and chicken broth. Bring the mixture to a simmer and cook for an additional 3-4 minutes, allowing the liquid to reduce slightly.

Step 7

Return the chicken to the skillet, spooning the sweet and sour onion mixture over the top. Simmer for 2-3 minutes to warm the chicken and meld the flavors.

Step 8

Serve the Voodoo Chicken topped with the sweet and sour onions. Pair with rice or roasted vegetables for a complete meal.
