Ingredients

  • 12 large scallops
  • 0.25 cup vodka
  • 0.5 cup heavy cream
  • 2 medium, finely diced shallots
  • 1 teaspoon chipotle chili powder
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 tablespoon, finely chopped fresh parsley
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 cloves, minced garlic
  • 0.5 whole, juiced lemon

Directions

Step 1

Pat the scallops dry with a paper towel and season both sides with salt and black pepper.

Step 2

Heat the olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.

Once the skillet is hot, add the scallops and sear for 2-3 minutes on each side until golden brown and cooked through. Remove the scallops from the skillet and set them aside on a clean plate.
