Ingredients

  • 16 oz Cheese tortellini
  • 8 oz Italian sausage (mild or spicy)
  • 2 tbsp Olive oil
  • 1 medium Yellow onion, diced
  • 3 cloves Garlic cloves, minced
  • 2 tbsp Tomato paste
  • 28 oz Crushed tomatoes
  • 1 cup Vodka
  • 1 cup Heavy cream
  • 1 cup Grated Parmesan cheese
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.5 tsp Red pepper flakes (optional)
  • 2 tbsp Fresh basil, chopped (optional garnish)

Directions

Step 1

Bring a large pot of salted water to a boil and cook the cheese tortellini according to the package instructions. Drain and set aside.

Step 2

In a large skillet or saucepan, heat the olive oil over medium heat. Remove the casings from the Italian sausage (if using links) and crumble the sausage into the pan. Cook until browned and fully cooked, about 5-7 minutes. Remove the sausage with a slotted spoon and set aside.

Step 3

In the same skillet, add the diced onion and sauté until softened, about 4-5 minutes. Add the minced garlic and cook for another 1-2 minutes until fragrant.

Step 4

Stir in the tomato paste and cook for 1 minute to deepen the flavor. Pour in the vodka and scrape the bottom of the pan to deglaze. Let it simmer for 2-3 minutes to cook off the alcohol.
