  • 75 grams All-purpose flour
  • 500 milliliters Beef or veal stock
  • 250 grams Cooked shredded beef or veal
  • 1 small Onion, finely chopped
  • 2 tablespoons Fresh parsley, chopped
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 0.25 teaspoon Ground nutmeg
  • 2 pieces Egg yolks
  • 200 grams Breadcrumbs
  • 50 grams Plain flour (for coating)
  • 2 pieces Eggs (for breading)
  • 1 liter Vegetable oil (for frying)

Directions

Step 1

Melt the butter in a medium-sized saucepan over medium heat. Stir in the flour and cook for 2-3 minutes, whisking continuously, to create a roux.

Step 2

Gradually add the stock, a little at a time, whisking to prevent lumps. Cook until the mixture thickens into a smooth, creamy sauce.

Step 3

Stir in the shredded beef or veal, chopped onion, parsley, salt, black pepper, and nutmeg. Mix well and cook for 2-3 minutes.

Remove from heat and stir in the egg yolks. Mix thoroughly until well combined.

Allow the mixture to cool slightly, then transfer it to a shallow dish. Cover and let it chill in the fridge for at least 2 hours or until firm.
